Quick Chicken Stew
This recipe is a family favorite for those busy evenings when you want comfort food, but don't have the time to simmer it all day. Serve over rice, pasta, or with mashed potatoes.
INGREDIENTS
2 tablespoons olive oil
1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
2 cloves garlic, minced
1 medium onion, cut into 1/2-inch pieces
1 medium carrot, thinly sliced
1 medium zucchini, cut into 1/2-inch pieces
1 medium red bell pepper, cut into 1/2 inch pieces
2 (14.5 ounce) cans diced tomatoes with juice
1/2 teaspoon red pepper flakes
1/2 teaspoon dried basil
1 bay leaf
2 tablespoons butter
salt and pepper to taste
DIRECTIONS
Heat the olive oil in large skillet over medium-high heat. Stir in chicken and cook about 1 minute. Mix in garlic and onion; cook until tender. Stir in carrot, zucchini, and red bell pepper. Pour in tomatoes with juice. Season with red pepper flakes, basil, and bay leaf, and continue cooking 10 minutes, until vegetables are tender and chicken juices run clear. Stir in the butter until melted, and season with salt and pepper just before serving.
Quick Chicken Divan
INGREDIENTS
2 (10 ounce) packages frozen chopped broccoli
2 cooked boneless chicken breast halves, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup mayonnaise
1 teaspoon lemon juice
1 1/2 cups shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place broccoli in the bottom of a 9x13 inch baking dish. Top with the chicken.
In a small bowl, blend the cream of chicken soup, cream of mushroom soup, mayonnaise, and lemon juice. Pour the mixture over the chicken. Top with Cheddar cheese.
Bake 35 to 40 minutes in the preheated oven, until bubbly and lightly browned.
Quick Chicken Cordon Bleu
INGREDIENTS
4 boneless, skinless chicken breast halves
2 teaspoons Dijon mustard
1/2 teaspoon paprika
4 slices fully cooked ham
1 cup soft bread crumbs
1 cup grated Parmesan cheese
1/4 teaspoon pepper
1/4 cup mayonnaise
SAUCE:
1 tablespoon butter or margarine
1 tablespoon all-purpose flour
1 cup milk
1/4 teaspoon salt
1/2 cup shredded Swiss cheese
2 tablespoons white wine or chicken broth
DIRECTIONS
Flatten the chicken to 1/2-in. thickness. Spread mustard on one side; sprinkle with paprika. Top with a ham slice. Roll up tightly; secure with toothpicks.
In a bowl, combine the bread crumbs, Parmesan cheese and pepper.
Brush chicken with mayonnaise; roll in crumb mixture. Place in a shallow 2-qt. microwave-safe dish; cover loosely. Microwave on high for 7 minutes. Turn the chicken; cook 7 minutes longer or until juices run clear. Remove toothpicks; set aside and keep warm.
In a 1-qt. microwave-safe dish, heat the butter on high for 30 seconds; stir in the flour until smooth. Cook, uncovered, on high for 30 seconds. Add milk and salt. Cook 3-4 minutes longer or until thickened. Stir in cheese until smooth. Add the wine or broth. 1) Spray sauce pan with Pam
2) Put in frozen chicken breast
3) Put in some seasoning
4) Cover with tin foil or lid, flip once every 7-10 minutes.
It makes a GREAT chicken sandwich.
Other options:
Put 4 chicken breasts in a 9 x 9 pan, pour in some cream of ____ soup and milk, add some stuffing, bake at 350 for 30 minutes. It'll make some great chicken casserole.
Grill it.
Chopped up Bar-Be-Que chicken, it is quick and easy!
Bruschetta Chicken
The amounts are approximate, as I usually eye-ball as I go.
4 boneless, skinless chicken breasts
Italian dressing (I like zesty Italian %26amp; eyeball the amounts)
4 Roma Tomatoes, seeded and diced
2 cloves garlic, minced
fresh basil (or spinach)leaves, slivered (about 1-2 cups)
mozzarella cheese, cubed
1/4 - 1/2 cup red onion, diced
Marinate chicken breasts in Italian dressing for about 3 hours in the fridge. Mix tomatoes, garlic, basil or spinach, red onions, mozzarella, and Italian dressing. On an indoor or outdoor grill, grill chicken breasts 4-5 minutes on each side, or until done. Slice chicken breasts and top with tomato mixture.
Serve with fetuccine alfredo, grilled asparagus or linguine and pesto sauce

at the grocery store they sell these packages called pasta sides; they are made by lipton or knors.
buy the ones called chicken brocoli.
and then cook it and throw chooped chicken into it after is done; and its soooooooo goood!!
and you can even take the leftovers with you to work for lunch.
just heat it up in the microwave!!
and the pasta cooks in like 7 minutes.
all you have to do is add water, mill and butter.
its so quick and easy!!
Chinese Chicken
Chicken of choice(I like leg quarters best)
Garlic powder
Soy sauce
Sprinkle chicken with garlic powder, then cover chicken in soy sauce. Bake @ 350 for 30 minutes or until chicken is done.I take gravy from chicken and soy sauce and put on white rice awesome!!I usually make this before I go to work and just put in fridge to marinate and pop in oven when I come home dinner in 30 minute
Greek Chicken
Chicken Breasts
1 stick of melted margarine(I melt in bowl then add to zip lock bag)
1-2 tbl garlic powder
1- 2 tsp garlic salt
1 tsp oregano
1 Tbl parsley
juice of 1 lemon(optional I use lemon sometimes but not all the time)
Melt butter and add all ing(except chicken) mix well, then add chicken marinade 1-8 hrs put in baking dish and bake @ 350 until done. Same as above use left over butter to put on rice. I also do this before I go to work and ready to cook when I get home. Sorry I don't measure so you might want to add or take out what your taste is use too.
