Does anyone know a Chicken Recipe that?

involves using Tequila and Citrus(orange Rhine's graded up).. thanks im just getting tired of having the same old chicken and frying it in a pan. yuck... i want something new and healthy.. so thanks again and i appreciate it.Does anyone know a Chicken Recipe that?
Orange %26amp; Tequila Chicken, Grilled





Tequila may put us to sleep, but it wakes up this chicken recipe. The bite of tequila is delicious with the sweetness of orange.





4 chicken breasts, skinless, boneless


4 green onions, chopped


1/2 cup orange juice


1/2 cup tequila


1/4 cup lemon juice


1 teaspoon grated orange zest


1 jalapeno pepper, seeded and minced (use rubber gloves)








METHOD





Place chicken breasts in a shallow dish. Sprinkle chopped onions over chicken. Mix together orange juice, tequila, lemon juice, orange rind and jalapeno. Pour mixture over chicken, cover and refrigerate for 6-8 hours, turning two or three times during the day.





Remove chicken from marinade, let stand at room temperature for 1/2 hour, then grill over hot coals approximately 20 minutes, basting with marinade, until the chicken is done.





Discard any remaining marinade and serve. Excellent with rice.

Here's a really tasty salad that I copied from a great restaurant in my area.You'll need for 4 servings:


2 hearts of Romaine lettuce


1 can of white or pink pinto beans (rinsed in cold water)


1 can of mandarin oranges (drained with some of the liquid reserved to be added to the dressing to taste)


1 cup of shelled pecans sauted in butter


2 cups of croutons sauted with the pecans


4 chicken breast tenders grilled


Asian sesame salad dressing


Prepare 4 large salad bowls individually starting with fresh,washed and chopped romaine. Divide the beans,oranges,pecans and croutons equally in each bowl. Top with the grilled chicken and dress with the asian sesame dressing .


Serve with tequila and a slice of lime and enjoy.

Best Grilled Margarita Chicken... Ever!


INGREDIENTS:


2/3 cup chopped fresh cilantro


2 tablespoons coarse black


pepper


2 teaspoons garlic powder


2 teaspoons onion salt


1/2 cup margarita mix


1/4 cup lime juice 1/4 cup orange juice


3 tablespoons tequila


3 tablespoons triple sec


2 tablespoons honey


1 cup light olive oil


6 skinless, boneless chicken


breast halves





DIRECTIONS:


1. Place cilantro, pepper, garlic powder, and onion powder in the bowl of a blender. Pour in margarita mix, lime juice, orange juice, tequila, triple sec, and honey. Puree on high speed until smooth, then reduce speed to medium-low, and slowly add the olive oil; blend until creamy. Place chicken breasts in a resealable plastic bag or glass bowl; pour marinade overtop and toss to coat. Refrigerate for 5 hours.


2. Preheat an outdoor grill for medium-high heat and lightly oil grate.


3. Remove chicken from the marinade, shake off excess, and discard remaining marinade. Grill the chicken until tender and juices run clear, approximately 7 minutes per side.

Chicken Satay


1 cup plain non-fat yogurt


juice of one lime


1 clove garlic, minced


1 tsp. kosher salt


1 tsp. freshly-ground black pepper


1 dash hot sauce (or more if you like it hot)


1-1/2 pounds chicken tenders or boneless chicken breasts, pounded thin and cut into strips


Whisk together the first six ingredients in a small bowl. Place chicken tenders in a ziploc bag. Pour marinade over the chicken pieces. Refrigerate 30 minutes to 2 hours.





Meanwhile, soak bamboo skewers in water for at least 20 minutes. Preheat grill or grill pan on medium-high heat. Thread chicken tenders onto skewers, pushing down so chicken pieces will stay in place when turned. Grill chicken for 3 to 5 minutes on each side.





Serve chicken with Thai peanut sauce (recipe below).





Thai Peanut Sauce Recipe


1/4 cup freshly-squeezed lime juice


2 cloves garlic, minced


1/4 cup low-sodium soy sauce


1/3 cup creamy peanut butter


1 Tbsp. brown sugar


1 dash hot sauce


1/4 cup hot water, if needed


fresh cilantro for garnish


Combine all ingredients except hot water in a food processor fitted with a metal blade. Pulse until well combined. Drizzle in the hot water, if necessary, to reach a sauce-like consistency. Garnish with fresh cilantro, if desired.





Makes 18 to 20 skewers.

Apricot Chicken with Ginger


Preparation - 15 minutes, cooking time - 30 minutes.





2 chicken breasts, cut-up


Sauce:


1/2 cup apricot preserves


2 tbsp cider vinegar


1 clove garlic, minced


1 tbs soy sauce


1 tsp ginger


1/2 cup chopped pecans


Fresh black pepper





Preheat oven to 350 degrees F.


Mix together all sauce ingredients, set aside.


Place chicken breasts on a roasting pan. Baste with apricot mixture and bake for about 30 minutes or until cooked through. Keep basting every 10 minutes.


Last 5 minutes of cooking, turn the oven to broil. Lightly brown the chicken just before serving
