鈥?500 gms Chicken
鈥?4 Large onions
鈥?4 Large tomatoes
鈥?1/2 tsp Turmeric powder
鈥?1 tsp Red chili powder
鈥?1 tsp pepper
鈥?4 Garlic flakes
鈥?1 Ginger
鈥?2 Cups oil
How to make Karahi Chicken:
鈥?Grind ginger and garlic to make a paste.
鈥?Heat the oil and put turmeric powder, red chilli powder, pepper and ginger garlic paste.
鈥?Fry it well.
鈥?Add chicken and cook it till it turns smooth.
鈥?Add chopped onions and tomatoes.
鈥?Cook it for 5 minutes.
鈥?Serve it hot with pulao.
Recipe Karahi Chicken
Karahi Chicken is also known as chicken-fry or Bhuna chicken. I am using Skinless boneless Chicken breast cut into long strips. However, you may use any portion of the chicken.
Ingredients
1. Canola or Olive oil: 2 Tablespoon
2. Cumin Seeds: 1/2 teaspoon
3. Mustard seeds: 1/2 teaspoon
4. Fajita style cut Onions: 1 Cup
5. Minced Garlic: 1 Tablespoon
6. Chopped Ginger: 1 Inch
7. Turmeric powder: 1/4 teaspoon
8. Cumin Powder: 1 teaspoon
9. Coriander Powder: 1 teaspoon
10. Fenugreek Powder: 1/4 teaspoon
11. Nutmeg powder: 1/4 teaspoon
12. Ground Cardamom: 1/4 teaspoon
13. Chicken breast Strips ( 1/4'; thick, 1/2'; wide): 1 Pound
14. Fajita style cut Bell Pepper: 1/2 Cup
15. One Tomato cut into 6 wedges
16. Water: 1/4 Cup
17. Salt
18. Pepper
19. Chopped Cilantro: 1/4 cup
Method
Step 1: In a pan, heat oil. Add cumin seed as they roast to slightly brown, add mustard seed as they will start to crack.
Step 2: Add onions, saut茅 till clear. Add garlic and ginger, Continue saut茅 for a couple of minutes.
Step 3: Add ingredients 7 through 15. Stir fry till chicken is white and firm. Don't let the spices bur. If needed add a table spoon of water. Add water, salt, cayenne pepper to taste. Bring to a boil. Simmer covered 10 minutes. Remove lid. Stir-fry to almost a dry coated chicken.
Garnish with chopped cilantro.

* 750 grams of Chicken
* 5 Spring Onions (Hari Pyaaz)
* 5 Tomatoes (chopped)
* 5 Green Chillies (chopped)
* 2 tbsp. of Ginger (chopped)
* 4 flakes of Garlic (chopped)
* Fresh Coriander Leaves (Hara Dhania) (chopped)
* Salt (to taste)
* 1/4 tsp. of Red Chilli Powder
* A pinch of Turmeric Powder (Haldi)
* 1/2 cup of Oil
1) Heat the oil and add garlic, ginger, salt, red chilli powder and turmeric powder. Fry for a few minutes over medium heat.
2) Add chicken pieces and fry until golden brown on all sides and cook until tender.
3) Water should evaporate and if you see the substance now oily, add green onions, coriander leaves, green chillies, and tomatoes.
4) Cook for another five minutes in covered pot and serve.
Tip: Use long-handled tongs instead of a fork - forks pierce the chicken and allow the flavorful juices to escape.
