Roast chicken recipe with skin on chicken breast...?

i'de love to try raosting some skin on chicken breast fillets for dinner tomorrow. i once saw on a cooking show... the chef merinated the chicken and then stuffed some yummy looking filling under the skin of the chicken and baked/roasted it. i forgot to take the recipe down but would love to try sometihng similar. anyone got any simple recipes that require stuffing the underside of the chicken skin with yummy looking stuff? also..what side dishes could go with ur recommended recipe? mashed potatoes? i'm new to cooking western food so simple ideas will be good =)Roast chicken recipe with skin on chicken breast...?
1 stick unsalted butter, softened


1/4 c finely chopped herbs (such as dill, thyme, or parsley) or a tsp of a dried herb mix


1 tsp lemon juice


1/4 tsp lemon zest


1/2 clove minced garlic


1/4 tsp Kosher salt





Mix all ingredients well, and tuck small pats under the skin of the chicken. You can also melt a small portion of this same herb butter to brush the tops of the skin with as well.





I'd keep the side dishes simple: roasted red potatoes with garlic and rosemary would be great, and you can put a pan of them in the oven to cook along with the chicken. Just make wedges of red potatoes with the skins on, and toss with olive oil, rosemary, minced garlic, kosher salt and a touch of black pepper.

Delicious chicken stuffed with parmesan salami and sunblushed tomatoes.





Ingredients125g parmesan salami, chopped (reserve 4 slices and cut into strips)


75g sunblushed tomatoes, chopped


2 heaped tablespoons mascarpone cheese


15g pack fresh basil leaves, roughly torn


salt and freshly ground black pepper


4 chicken breast fillets with the skin left on








To serve


40g bag rocket and mashed potatoes








Preheat the oven to 190掳C, 375掳F, gas mark 5.


Place the chopped salami, tomatoes, mascarpone and the basil in a bowl and season to taste. Mix well to combine.


Divide the mixture into 4 and press one portion under the skin of each chicken breast.


Arrange strips of salami over the chicken skin and place on a baking tray in the preheated oven for 25 minutes until golden and cooked through.


Delicious served hot or cold, whole or thickly sliced.
