BAKED CHICKEN BREASTS IN SOUR CREAM





6 (12 oz.) broiler-fryer breasts


2 c. sour cream


1/4 c. lemon juice


4 tsp. Worcestershire sauce


4 tsp. celery salt


2 tsp. paprika


4 cloves garlic (chopped fine)


4 tsp. salt


1/2 tsp. pepper


1 3/4 c. dry bread crumbs


1/2 c. butter


1/2 c. shortening





Cut chicken in half and dry. In a large bowl combine cream, lemon juice, Worcestershire sauce, salts, garlic and pepper. Coat each piece of chicken well. Let stand covered in refrigerator overnight. Next day preheat oven to 350 degrees. Remove chicken from mix and roll in crumbs, coating well. Arrange in single layer in large shallow pan. Melt butter and shortening. Spoon half over chicken. Bake uncovered 45 minutes. Add rest and butter. Bake 15 minutes.


CREAMY BAKED CHICKEN BREASTS





Split 4 whole chicken breasts (about 4 pounds), remove skin and bones. (I use boneless, skinless breasts.) Arrange chicken in shallow baking dish (I use 9 x 13 inch dish). Place 1 slice of processed or natural Swiss cheese on each piece of chicken. Stir together 1 can (10 3/4 oz.) condensed cream of chicken soup, or mushroom soup, and 1/4 cup dry white wine or water. (I also use creamy chicken mushroom soup.) Spoon evenly over chicken. Coarsely crush 2 cups seasoned stuffing mix and sprinkle over top; evenly drizzle 1/3 cup butter. Bake uncovered in 350 degree oven for 50 to 55 minutes (possibly 45 minutes), or until thickest portion of breast is tender when pierced and meat is opaque throughout. Delicious with wild rice.

GREEN PEA - CARROT - MOZZARELLA SALAD





1 c. fresh or frozen green peas


1 med. size carrot, peeled %26amp; chopped


1/2 sm. stalk celery


1 oz. mozzarella cheese, cut in sm. cubes (about 1/4 c.)


2 tbsp. plus 1 tsp. buttermilk


2 green onions, finely chopped


1 tbsp. plain low fat yogurt


1 1/2 tsp. mayonnaise


1/2 tsp. balsamic or red wine vinegar


1/2 tsp. dried basil, crumbled


1/8 tsp. pepper


1/4 tsp. sugar





In small pan, bring 1 inch of water to boil; add peas and carrots and cook 5 minutes. Drain; rinse under cold water; drain. Place in medium bowl; add celery and cheese; toss well to mix.


In small bowl, combine buttermilk, green onions, yogurt, mayonnaise, vinegar, basil, pepper and sugar. Spoon over salad and toss well. Cover and refrigerate.





GLAZED CARROTS AND PEAS





1 lb. carrots


1/2 lb. snow peas


1 1/2 tbsp. finely minced ginger


1/4 c. butter


1 1/2 tbsp. sugar


Salt %26amp; freshly ground pepper to taste





Cut carrots into sticks about 2 inches long. Trim snow peas. Cook carrots until barely tender. Add snow peas and drain immediately. Rinse under cold running water.


In skillet, melt butter. Add carrots, snow peas, ginger and sugar, tossing until sugar is dissolved and vegetables are hot. Season with salt and pepper.Looking for a tasty oven baked chicken breasts (6), potatoes, %26amp; carrots recipe.?

Place chicken in a large baking pan, then add veggies on top. Layer thick onion slices on top if desired. Sprinkle all with your favorite herbs (basil, thyme, oregeno or whatever you like), salt and pepper and garlic if you desire. Cover tightly and bake at 350 degrees F., for 1 hour.

Use the same method and pour a large can of tomato soup (do not dilute) over all and bake at the same temp for the same amount of time. Serve over hot, cooked white rice with freshly baked buttered bread on the side....
Spray the bottom of a 9x13 glass baking dish with Pam. Sprinkle a thin layer of either shredded mozzarella or cheddar on the bottom with some sliced mushrooms, then lay out the chicken breasts on top.





Halve the potatoes long wise and spray them with the Pam, then sprinkle them with granulated sea salt. Ring the pan with the potatoes. Cut the carrots in 2'; chunks and put them between the chicken breasts.





Make a simple white sauce (also known as a ';roux';) with 2Tbutter, 2Tflour and 1C chicken broth or bouillion. Stir the flour into the melted butter, then add the liquid to the butter/flour paste with a wisk. Add 1T chopped chives or parsley for color. Taste and add a little white wine (and salt if needed) and stir until a creamy consistency. Pour over the chicken breasts.





Bake covered with foil at 350'; for 45 minutes.

Add all three and add stewed tomatoes and some tomato sauce, salt and pepper to taste. Let bake and serve with some crusty bread.
Chicken in a bag. My mommy makes it. It actually is amazing. You can put chicken legs or chicken breast in chicken broth i think %26amp; add lots of vegetables and chopped up potatos and put it in a bag and then put it in the oven. theres a certain type of bag...go to ur local supermarket.

Method:


Preheat oven to 350 degrees. In a large baking pan or roasting pan, put chicken in pan, place chopped potatoes around chicken. Add water, cover potatoes. Sprinkle poultry seasoning on chicken. Sprinkle salt on chicken and potatoes. Put other ingredients (optional) with potatoes. Cover with a foil and place in oven and bake for 30-45 minutes, or until water is bubbling, and chicken is almost done. Remove foil from the pan, stir the potatoes (and vegetables) gently. Put the pan back in oven without foil, and continue to bake for another 15 to 30 minutes, or until chicken is done and potatoes are tender.
