Southern BBQ Chicken
1/2 c. of ketchup (Heinz)
1/2 c. Heinz Original Barbeque Sauce
1 tbsp. brown sugar
1 tbsp. honey
2 tsp. pepper
3 tsp. allspice
1 tbsp. mustard
Chicken parts: 5 wings, 5 legs, 3
thighs, 2 breasts
1. Boil chicken first for 20 minutes. 2. Preheat oven on 350 degrees for 10 minutes. 3. Mix above ingredients and stir. 4. When chicken is done put pieces on a baking pan. The sauce is put into a saucepan to get heated for 5 minutes on stove top. Pour half the sauce on the chicken and put into oven for 25 minutes. Take out, then turn chicken pieces over and add more sauce. Use all sauce after this point. Put chicken back into the oven for 25 minutes and when it is done take out, put on serving dish. Serves well with rice and corn. Serves 4-6 people.
Jamican Jerk Chicken
4 scallions
2 cloves garlic
2 jalapeno peppers
2 limes
1 tsp. allspice
3 tbsp. oil
Salt %26amp; pepper
8 chicken thighs, about 2 1/2 lb.
Mince scallions, garlic and pepper; put in a large bowl. Squeeze 3 tablespoons juice from limes and add to the bowl with the allspice, oil, 1 teaspoon salt and 1/4 teaspoon pepper. Put chicken in bowl, turn to coat and marinate 30 minutes. Heat broiler. Put chicken on broiling pan, reserving marinade. Broil the chicken 4-6 inches from the heat source, basting it occasionally with reserved marinade, until browned and cooked through, about 30 minutes.

2 chicken legs
1/4 cup white wine vinegar
1/4 cup fresh lime juice
1 tablespoon vegetable oil
1 tablespoon molasses
1/4 cup minced onions
1-3 habanero pepper, minced (or to taste)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt
3 cloves garlic, minced
1 1/2 tablespoons dark jamaican rum
1. Combine vinegar, lime juice, oil, and molasses in a small bowl; stir onions and habaneros into liquid and add rum.
2. Mix dry spices together in a small bowl;slowly whisk in the liquid mixture, and add the garlic.
3. Pour 1/2 cup of marinade into a separate cup to use as a baste during cooking; reserve.
4. Separate leg quarters, if desired and place in a ziploc bag or shallow dish and pour remaining marinade over, stirring to coat thoroughly; marinate, refrigerated, for 6 hours, or overnight.
5. Prepare grill by setting coals off to one side.
6. Place an aluminum pan (or prepare one out of heavy-duty aluminum foil) next to the coals on the lowest grill rack (not directly over coals); pour one cup of water plus 2-3 tbsp rum in to drip pan.
7. When the coals are hot, grill chicken on prepared rack above the drip pan (not directly over the coals), opposite from the coals and cover grill.
8. As chicken becomes browned, occasionally baste with reserved marinade, and cook chicken until juices run clear and chicken is done, at least 30 min, up to an hour, slow cooking preferred.

grill chicken... bbq sauce.... just after you take it off, sprinkle ground allspice (not too much! just dust one side) it s good as hell!
Allspice? Hmmm ok well heat your oven to 375 and put the chicken in a pan, in the microwave melt some butter in a bowl and mix in some allspice (and whatever other seasonings you like) pour it over the chicken and bake for about 45 minutes.
Rub allspice into the chicken and marinate in Italian dressing for a couple hours,BBQ it until it almost falls off the bone. Good eating enjoy
