One Step Chicken and Rice Soup





1/2 cup chopped celery


1 pound boneless chicken breast halves, cooked and diced


3 (14.5 ounce) cans chicken broth


1/2 cup water


2 cups frozen mixed vegetables


3/4 cup converted long-grain white rice


1 tablespoon dried parsley


2 teaspoons lemon and herb seasoning





Combine celery, chicken pieces, chicken broth, water, mixed vegetables, rice, parsley and herb seasoning in a slow cooker. Cover, and cook on low 6 to 8 hours. If soup is too thick, add more water to dilute and allow 15 minutes of additional cooking time.

EASY CHICKEN RICE SOUP





1 fresh whole chicken


8 cups water


1 tablespoon salt


4 carrots, peeled and chopped


6 celery ribs, chopped


1 onion, chopped


1 clove garlic, crushed


1 cup uncooked rice





1. Place cut-up chicken in a large kettle with water. Add salt and bring to a boil. Reduce the heat and skim off the fat. Add carrots, celery ribs, onion and garlic clove.


2. Cover and cook until vegetables are tender, about 30 minutes. Remove chicken, dice the meat, and return to the soup. Add rice and cook until tender, about 20 minutes.


Remove from heat and serve warm.





Makes 8 servings.






CHICKEN WILD RICE SOUP FOR A CROWD





Mix together the following:





1 gal. non-dairy creamer





Add hot water according to directions - it should be equivalent to 1 gallon after water is added).





1 gal. milk


1 gal. chicken broth (add hot water to taste)





Boil together until done:





8 shredded carrots


1 chopped onion


1 bunch celery, chopped


12 c. diced chicken





Cook 12 ounces wild rice until done.


Add all of the ingredients together. Melt 1 pound of butter and add flour to thicken. Add to soup and thicken to desired consistency.

From scratch:


boxed or canned ready broth


quick cook rice


precooked chicken (or get boneless chicken breast and cut it in small chunks)


veggies of choice (or use canned or frozen mixed vegetables)


poultry seasoning to taste





Put everything in a pot and boil until chicken and rice are done.



Take a Chicken or chicken parts. Place in a large pot and cover with water. While cooking slice carrots, onion and some celery and salt and pepper. let it all come to a boul, lower the heat and simmer. Add the rice when it comes to a boil and stir and simmer. Cover and lower the heat and let simmer wntil chicken done and rice fluffy.
Boil 1 boneless chicken breast in 1 large can of chicken broth. Remove chicken and shred or chop-- your preference. Add 1 cup of uncooked rice. When rice is almost cooked thoroughly, add chicken back ot the broth. Season with salt and pepper to taste. Garnish with chopped green onion.

cook veggies in stock 1 hour


add chicken





serve over white rice
open a can of Campbells condensed chicken and rice, add water, heat and voila!
