The only place in our town to get a chikcen pot pie is terrible. The pie is terrible, and all there food is terrible. So i was wondering does anybody have a delicous zesty, tasty chicken pot pie recipe?
And please nothing to to spicy, we have 2 little boys ( our girl can't eat it anyways) and they can't handle anything to spicy.

Homemade Chicken Pot Pie
4-5 boneless, skinless chicken breasts
2 tablespoons finely chopped onion
1 can mixed vegetables
2 cans cream of chicken soup (undiluted)
Biscuits, any type
Boil the chicken breasts in a large frying pan, using just enough water to cover the meat. Sprinkle with seasonings (I use garlic salt, onion salt, pepper and paprika, but use whatever you prefer). Add onion to the water. Cover and simmer until meat is cooked through. Remove chicken from the liquid; cut into cubes. Add enough water to remaining liquid to equal 3 cups. Mix cans of soup with the liquid. Drain and add vegetables. Add chicken cubes. Cover and simmer about 10-15 minutes until the liquid thickens into a gravy. Serve over warm biscuits.
This makes two pies. Enough for one meal and you can wrap and freeze the other for another night.
I buy a Rotisserie Chicken and de-bone it. Set aside.
Add to a large bowl 4 cans of veg-all (mixed vegetables in a can). Blend in on can of cream of chicken soup and one can of cream of chicken and herb soup undiluted, 1 pint of sour cream and a large bag of cheddar cheese. Salt and pepper to taste and blend well.
Before baking brush the top with an egg you have beaten so it will come out glossy.
Pre-bake a pie shell already made (you can buy them two to a package in the frozen section of the store).
Spoon in the vegetable mixture in the bottom of each pre-baked pan and then a layer of chicken, another layer of vegetable mixture and finish it off with chicken. Top with a little bit more of grated cheese and then top each pie with another unbaked pie shell and seal. Puncture a small hole in the top to give it breathing room while it bakes.
Bake in the oven @ 350 degrees for about 1/2 hour. Everything is cooked you are really just getting it bubbly hot and melting the cheese.
I am always asked for my recipe. It turns out the best every time.
Quick and Easy Chicken Pot Pie
2 cups chicken breast chopped
2 hard boiled eggs, sliced
1/2 cup thinly sliced carrots
1/2 cup frozen green peas
1 (103/4oz) can cream of chicken soup
1 cup chicken broth
salt and pepper, optional
1 1/2 cups instant biscuit mix
1 cup milk
1 stick melted butter
Preheat oven to 350*
In greased 2 quart casserole, layer the chicken, eggs, carrots and peas. Mix the soup, chicken broth and season with salt and pepper if desired. Pour over layers. Stir together the biscuit mix and milk and pour over casserole. Drizzle butter over topping. Bake until the topping is golden brown 30 - 40 minutes

Ingredients
4 chicken breasts, cooked, skinned and deboned
40 oz bag frozen mixed vegetables
4 small potatoes
2 cans cream of chicken soup
4 Pillsbury ready pie crusts (in the dairy case)
Directions
Cook vegetables with potatoes until done. Drain and add soup and cut up chicken. Season to taste. Put into two unbaked pie shells. Top with pie crusts (cut vents). Bake at 350 degrees for
1/2 hour or until brown. Cool a bit before cutting.

Chicken Pot Pie
2 -3 chicken breasts cut up into bite size pieces
1 can cream of chicken soup
1 can of chicken gravy
1 small bag of frozen vegetables
salt and pepper to taste and I use about 1 tsp. poultry seasoning.
1 pillsbury pie crust
Cook chicken and then mix all ingredients put in a 9 in. pie dish and bake at 350* for 30-40 min.
The chicken gravy may make it to rich for your kids so you might want to use 2 cans of cream of chicken soup. You can add more kinds of vegys if you would like.
