Does anyone have an easy recipe for chicken breast.?

I need a light recipe using chicken breast. I can't get to the store during the day so it has to be with things I have here. I have all the regular spices and I have some things like feta, spinach, broccoli, asparagus, and cauliflower. I usually make grilled chicken with BBQ sauce and asparagus for dinner every night. I need some new recipes! Any ideas? :)Does anyone have an easy recipe for chicken breast.?

Stuffed Chicken with Spinach





Here is what you need:





* 2 Chicken Breasts


* 2 tbsp minced garlic


* olive oil


* 1 bag of fresh spinach


* 1/2 cup of Feta


* a few Sun Dried Tomatoes *





With a heavy meat pounder, pound the 2 chicken breasts until they are about 1/4 of an inch thin. In a large skillet, combine the garlic, olive oil, spinach and sun dried tomatoes and cook until the spinach wilts down. Then add the feta and mix it all together. Divide this mixture into 2 parts and pile it high on top of each chicken breast. Then wrap the chicken around the filling and secure together with 2 skewers. Bake these in the oven for about 30 minutes on 375 degrees. And they will look like this when your done...

*Ingredient Substitutions


For 1/2 cup chopped sun dried tomatoes, substitute either 1 1/2 cups drained canned tomatoes OR 4-6 fresh plum tomatoes, seeded and chopped.Does anyone have an easy recipe for chicken breast.?
cut a pocket in the chicken. put feta mixed with spinach[no stems] in the pocket. Season to taste. If you have a block of cheese put a good thick slice on top of breast and bake at 350 for 50min-to 1hr. no cheese? 400 to 45min to 1hr. Can use thick pork chops as well and put whatever in the pocket. fresh or frozen veggies is Unlimited. Block of cheese was meant to be other flavor if you have. pork temp depends on thickness of meat so check accordingly

breadcrumbs


1 egg


salt and pepper


oil to shallow fry





METHOD








1. Chop chicken into small chunks.


2. Beat egg in a bowl


3. Place crumbs onto a plate season with salt and pepper.


4. Dip each piece of chicken into beaten egg,


5. Then into crumbs coat evenly.


6. Heat oil in pan, add chicken pieces to pan and fry until golden.


7. Transfer to an oven tray and bake for 15 mins until piping hot and chicken is completely white.


8. Serve with chips or any potato dish and a salad.


9. My kids LOVE these! so much healthier than mcd's nuggets.





Dont worry about the calories, As long ad you maintain a healthy lifestyle and good exercise, Having these from time to time wont hurt you ;]
You could bake the chicken, cut it into little pieces, and mix it up into a rice/broccoli/cheese casserole. You can use cream of broccoli soup, mushroom soup, cream of chicken, stuff like that as your base of the casserole. My kids love it!

Healthy, Tasty, Fast and Quick !





Cut up the chicken, bit sized bits, or long lenghts, brown in olive oil, throw in your seasonings, after well browned ( I like to put a scortch on mine ) add your veggies, fry some more... throw in some garlic salt, pepper, and a good few shakes of Soya Sauce.. Can be eaten that way, or served on a bed of plain white rice
Salt and pepper the chicken and bake in the oven on 350 till golden brown. or in a pan with a bit of hot canola oil on high for 2 minutes on each side then medium for another 5 minutes on each side covered.
lemon, garlic, olive oil. wrap the chicken with this mixture in foil and bake for 30ish minutes at 350 make sure the chicken is DONE thru and thru. serve over some steamed veggies and you got something so good. save me some too ok?
Marinate the chicken in Italian dressing and grill.





Or, throw the chicken in a crock pot (slow cooker) with a jar of salsa and let it cook all day. it will melt in your mouth.
